Hi Lori,
I came in last week
on Friday (Nov 2, 2007)
to pick up a couple of 
things for the crown cake
that i told you i was going to make. I just wanted to thank you for your help and i wanted to update you with my result. There was certain things i was not satisfied but now i know what to do for my next cake. My friend's sister was really happy with it. So all ends well.  Lena T. Chicago
It looked like the inspiration cake and turned out pretty well.  Amazingly it held up from 6:30-10:00 in the hall without any incident.  Turns out my sister was having so much fun, she forgot about the cake.  A gentle reminder about it and she ran and cut the cake. Attached is a copy of the Atomic wedding cake. I admit, there are somethings that that took a toll on me and some great lessons learned. 
1) slicing a cake's layers perfectly level is next to impossible.
(note from Lori...Use a cake leveller for great results)
2) Butter cream uses an insane amount of butter!  I don't know if I'll ever look at that the same way ever again.
3) Icing edges take practice and good technique.

Greetings,   I stopped by early August looking for information on wedding cakes.  I mentioned that my sister was getting married and I had the opportunity to make her wedding cake.  You also assisted me in finding the right recipes for the cake and icing.  As an update the cake turned out great.

I was in the shop back in July getting supplies to do my first wedding cake and you were such a help and I just wanted to Thank You so much for all your advice!  The bride loved her cake and I had fun doing it.   I am enclosing a couple of pics of the cake once I got it all set up.  Thanks again for everything!!

October 2007     The DAMN Wedding Cake!

Here is my update in bullet form:
(1) It was 88 degrees F the day of the wedding
(2) The cake (specifically the buttercream) started melting out from under the shell of fondant during the last 45 mins of the 6 hour car ride
(3) The fondant began to crack the last 25 mins before we arrived at the site
(4) I attempted triage on the cake before the wedding
(5) The customers LOVED it.

Dear Lori,
My friend Rebecca and I came
in last Tuesday shopping for
wedding cake supplies with
our two boys.  Thanks for
all your help, I wanted to
send you photos of our cake.
We are so  proud of it, and
we are glad that we found
your shop.  The almond paste
mixed with the brown/chocolate fondant worked so wonderfully for the branch!  It tasted really great too (we used lots of crisco to keep it from drying, a trick we found last time we used fondant, and used toothpicks to keep the branch attached to the cake)!   

The chocolate cakes cook book we purchased was a great help, I adjusted the recipe, though, added a bit more chocolate and butter (European chocolate has more fat content), and it worked great, everyone loved it.  We are big believers in wedding cakes tasting amazing! (most believe that wedding cakes taste terrible, or have to, for some reason!  I refuse to serve something that I wouldn't love to eat!)
And, it's all cake!  (so many people asked us if it was part styrofoam!  ha, ha) 

I am sure we will be by again for our next wedding cake.

The attached is the completed FHC Hockey Team cake delivered to the rink yesterday at 6:00.  I heard it was a hit. I could not have done it without the words of wisdom from Lori of Cakewalk Chicago, the "Tool" craftsmanship of Mark Sweeney and the love and support from everyone else.

All pieces are edible (not sure anyone could get their teeth in the sole and blade...it was made weeks ago per Lori! ) A little foil covered the "blade" for sheen and two large metal supports per Mark held everything upright.  Hockey pucks are 1 1/2 Little Debbie Oatmeal Cream Pies sandwiched together and covered with fondant. Such fun....such worry!!

You always give the greatest help and suggestions. This past week I came in with a last minute request and you gave invaluable help. My co worker wanted a 'Juicy Couture' inspired cake for her daughters birthday. This is what I came up with. Thanks again and I will most surely be back.
